L-leucine, also known simply as leucine, is an α-amino-γ-methylpentanoic acid, or α-aminoisohexanoic acid, with the molecular formula C6H13O2N. It was first isolated from cheese by Proust in 1819, and later Braconnot obtained crystals from the acid hydrolysates of muscle and wool and named it leucine.
Chemical Properties
It appears as white shiny hexagonal crystals or white crystalline powder, slightly bitter (DL-leucine tastes sweet). It sublimates at 145–148°C and melts at 293–295°C (decomposes). It is stable in hydrocarbon environments and inorganic acid solutions. About 1 gram dissolves in 40 ml of water and 100 ml of acetic acid. It is slightly soluble in ethanol (0.07%), soluble in dilute hydrochloric acid, alkaline hydroxides, and carbonate solutions, but insoluble in ether.
